大家應該都有嚐過饢餅(Naan),
但你知道嗎?印度餅其實有分很多種類!(至今約有 30 多種)
不同地區各有不同的形式和特色,每座城市都各有常用的麵粉和製作方法。
而這些餅的共同點是都適合沾上咖哩,或把配料鋪在餅上或塞入餅中。
今天跟大家介紹其中一種來自北印度的餅:
『Parotta (Porotta)』
源自喀拉拉邦、泰米爾納德邦及斯里蘭卡。
以精製麵粉Maida或小麥粉、以及雞蛋、酥油和水混合成麵糰,
再將麵團分成細絲後捲成球狀,壓平再煎熟而成。
較高的麩質比例使得麵餅更絲滑,更有麵糰的感覺。
口感Q,酥皮有層次感且香脆蓬鬆!
很像台灣的蔥抓餅或夜市的灌蛋餅
這道傳統麵餅通常是在早餐或午餐時間搭配優格、醃漬物或咖哩
在北印度的街頭和餐館都非常常見,
甚至宗教節日、婚禮或宴會場所都能見到它的身影喔!
近來也有人會製作變化版,搭配煉乳、榛果醬及香蕉做成甜點!
