在某些印度料理中經常嚐到一種帶點微苦、焦糖的香氣味,
它就是原生於東南亞與地中海的獨特香料:
『葫蘆巴籽 Fenugreek』
單獨嗅聞不太香,直接品嚐也苦,
但只要和其他辛香料結合,就能帶出複雜的甜苦味。
而且原先的楓糖味也會轉變成更深沉的焦糖味,
完整其他香料的風味喔!
除了葫蘆巴籽,其葉子也算是一種香草!
葫蘆巴葉分為新鮮、冷凍與乾燥三種,
新鮮葉片會用於烹煮咖哩或揉進麵包麵糰裡,
而乾燥的葉子則適合在起鍋前加入醬汁、咖哩或湯。
用法類似於台灣小吃中的香菜。
而只要經過長時間燉煮,葫蘆巴籽會釋放更多風味,
因此建議料理時先加入葫蘆巴籽,起鍋前再丟點葫蘆巴葉子,
如此一能為料理帶來更多層次的風味!
除了印度料理,在中國葫蘆巴則會作為中藥材來使用。
